I have no memories of growing up smelling grandmas amazing apple pie, but I do have memories of my grandmas fire peach cobbler at thanksgiving! I didn’t grow up with one of those abc family channel lives but I had a pretty good childhood. One thing though, I am determined to make those abc family memories for my children. I want to make sure they have memories of mommy watching movies, eating popcorn, playing video games and baking the best sweets their tummies can endure.
Now don’t get me wrong, I have amazing memories of my mother cooking Sunday dinner ever Sunday, and around Christmas she would always make cookies and candy and we would watch lifetime on Saturdays. But, lately I’ve been in the business of creating new memories for my Little’s.
Well, Saturday evening when my husband got off work I realized we had about 15 organic apples sitting in our fruit bowl.
Well, there was NO WAY in the world we were going to eat all of them before the started to turn into little brown balls so I decided to make an apple pie with the ingredients I had on hand. Lol (this could’ve been disastrous)
I looked in our cabinets to find…brown sugar, cinnamon, nutmeg, flour, lemon juice and went to the fridge for butter (not margarine).
So I began…I cut up about 6 apples. Kind of thin. (I’d actually recommend cutting about 10 because my pie was small)
Add about a capful of lemon juice over them as you put them in your bowl so that they do not brown.
Once you’re done add a 1/2 cup of brown sugar, and mix. Next add 2 teaspoons of cinnamon and 1 teaspoon of nutmeg. Mix again and 4 teaspoons of flour. I didn’t have any vanilla extract on hand but I recommend 1 teaspoon of vanilla as well. Mix all of this together. Last you’ll want to do is dice a 1/2 stick of butter and mix in with the apples. It’ll melt in the oven.
& although it was store bought I still got fancy and put the crust in my own fancy dish!
Last check it, let it sit for about 15 minutes and enjoy!
Apple Pie Filling
10 apples (add lemon juice to prevent browning)
1/2 cup brown sugar
2 teaspoons cinnamon
1 teaspoon nutmeg
4 teaspoons flour
Store bought pie crust
Homemade Pie Crust
2 1/2 cups all purpose flour
1 cup unsalted butter – chilled, cut into tablespoon-size pieces
1/2 teaspoon salt
7 tablespoons ice water
1 tablespoon cider vinegar
Combine flour, salt, and butter in a food processor. Pulse until mixture resembles coarse crumbs, about 10 1-second pulses.
Stir water and vinegar in a small bowl.
Pour half the ice water and vinegar mixture into the flour and butter mixture. Pulse to combine, about 3 (1-second) pulses. Pour in remaining ice water and vinegar mixture. Pulse until mixture just starts to come together, about 8 (1-second) pulses.
Turn dough out onto a wooden surface, pat into round shape and divide in half. Form each half into a disc about 5 inches wide.
Wrap each disc in plastic wrap and refrigerate for at least 30 minutes until ready to use.
