But It Tastes Like Chicken…

For the past 5 years my husband and I have tried giving up meat, but for some reason we just couldn’t let go of those crispy, flavorful, golden chicken wings! I think they were calling our name! Literally.

Well today, I dropped of my daughter at practice and I didn’t want to go home yet and I hadn’t started dinner so I decided we were going to try something new! My hubby is always down for something new so he was ready!

Today would be a meatless Monday and we would have vegan “fried chicken”, greens, and sweet potatos.  But for some reason I still wanted Buffalo wings…so we did it! We made vegan “wings” and “Buffalo wings”

Below both recipes are posted but I will say that my ENTIRE family loved everything! I didn’t let my 12 or 4 year old know it was mushrooms and they ate every bite!

Here’s what I bought…

Grape seed oil (which has soooo many benefits!)

Here are the top 5:

  1. Anti-inflammatory
  2. Anti-oxidant
  3. Anti-histamine
  4. Cancer prevention
  5. Beneficial to arthritis, dermatitis, acne, weight loss, high cholesterol and so much more!

So lets get to what you really came here for!

Seasoned “wings” ingredients

3 portabella mushrooms

Grape seed oil

Slap ya mama Cajun seasoning

Spelt flour

Almond/hempseed/coconut milk (whatever you choose)

Take out your mushrooms, flip over and scoop out the inside. (Some people don’t but it grosses me out)

Rinse your mushrooms, then slice them into strips. Not too thick.

Next sprinkle your seasoning over the mushrooms then drop them into your container of flour.

Shake it up!

Pour about a cup of grape seed oil into a small frying pan on medium-high heat. Wait until your oil is hot enough and add your mushrooms. (Check by dropping a pinch of flour into the oil and it should sizzle)

Mushrooms fry waaaaay faster than chicken so watch closely! Let them fry for about 3-5 mins…until golden brown.

Take out your “fried chicken” and put on a sheet to absorb the oil or go oldschool and put them on paper towels.

Wait for them to cool & enjoy!

P.s. The greens and sweet potatos are vegan too! I’ll post the recipe if you’d like.

“Buffalo Wings”

1/2 half head of cauliflower

Grape seed oil

Himalayan Seasalt & black pepper

Spelt Flour

Almond/hempseed/coconut milk (whatever you choose)

Sweet Baby Rays Buffalo Wing Sauce

Wash your cauliflower then cut off stems.

Season with salt and pepper, then add to spelt flour and shake it up!

Add cauliflower to hot oil and fry about 5 minutes or until golden brown.

Add “wings” to Buffalo sauce, shake and set aside to drain and cool.

Now it’s time to make fries and enjoy!

If you try either of these recipies please give us feedback, if you post it tag lifewiththegreens and please let us know if you enjoyed!
