I’m always trying to find more protein rich foods for my son to eat since he doesn’t eat meat and he doesn’t like cheese. Thursday my kids wanted tacos so my husband and I decided to experiment with something that we cook quite often on our house! QUINOA!
Quinoa is gluten-free, high protein, and one of the few plant foods that contain all 9 amino acids.
It is also high in fiber, magnesium, B-vitamins, iron, potassium, calcium, phosphorus, vitamin E and various beneficial antioxidants.
So here we go… I made the quinoa.
Put 2 cups of water in a pot, turn up the heat.
Add 1 cup of raw quinoa, with a dash of salt
Boil for 15-20 minutes.
I added the seasoning we usually use for tacos which is fire!!!
Add a 1/2 cup of water, let it warm for about 15 minutes and you’re all done!!
Then everything else is the same!
We used flour tortillas, added romaine lettuce, tomatoes, avocados, sour cream, cheese (if you like it) and salsa! The quinoa will take on the flavor of whatever its mixed with. This seriously tasted like ground beef/turkey!
