When life throws old bananas your way…make banana bread, duh!
For as far back as I can remember I’ve always loved bananas! I’d always buy them but never eat the entire bunch. With that being said, more often than that I’d leave the bananas in the counter and they’d end up as brown as chocolate. With that being said, I’ve been on the hunt for a perfect banana bread for my family because we ALL love it!
Well, for the past 7 months I’ve been living w vegetarian lifestyle while my fine hunny (that’s my contact name for him) lives a vegan life.
Can I just say that him being a vegan is completely different from vegetarian so most times I just eat vegan too! ((Insert laughing lazy face))
Today I decided to go ahead and bake a vegan banana bread from scratch! Of course you can alter this if you’d like.
For this recipe I used
4-5 overripe (black) bananas
1 cup of sugar
1 1/2 cup all purpose flour
1 teaspoon baking soda
1 teaspoon pure vanilla extract
“3 eggs” vegan egg replacement substitute
1/2 cup of melted vegan butter (earths balance)
Mix: bananas, sugar, vegan butter, “eggs,” flour, baking soda, vanilla
Bake for 45 mins to an hour at 325 degrees. Stick your toothpick in and it should come out clean and voila! You’re done & you’ve got a happy family and a happy tummy!
